In the 1980s, starting from the southern part of Taiwan,Taiwan Premium Rice
has been passed down through three generations and has been sold for forty years.

We understand that rice holds a fundamental place in Asian culture,serving as the cornerstone
of daily dining and being regarded as a primary staple.It is not only a key food source but also
plays a significant role in family gatherings, celebrations, and traditional ceremonies as an essential shared food.
Through the act of sharing, it becomes a means of connecting emotions and relationships.
Simultaneously, through the process of planting and harvesting,
rice represents both agricultural production and economic stability.

For Taiwan Premium Rice, rice is more than just a food supply; it is a connector of relationships,
embodying a sense of responsibility and commitment to those with whom we are connected.

《臺灣米其林指南 2024》共 10 家餐廳新獲得一星肯定 包含全球首間冰淇淋店

米其林很開心公布《臺灣米其林指南 2024》的完整名單,包括星級餐廳、必比登推介以及米其林指南入選餐廳,2024 年的《臺灣米其林指南》共囊括 343 個店家:157 家在臺北、66 家在臺中、59 家在臺南以及 61 家在高雄。和 2023 年的321 家入選相比,呈現穩定增長。 今年的名單中,共有 49 家一、二與三星餐廳,其中包含 10 家餐廳新獲得一星肯定,整體表現較 2023 年版本的 44 間星級餐廳成長。6 家米其林綠星餐廳因其傑出且富有啟發性的永續承諾,持續獲得肯定。 「臺灣是一座美麗的島嶼,擁有豐富多樣的食材和才華出眾的主廚們。今年的入選餐廳涵蓋來自世界各地五十多種料理種類,展現了臺灣餐飲行業的多元文化和高成熟度,更體現了臺灣不僅致力保存傳統與文化,更張開雙臂擁抱新趨勢,不拘框架,創新與傳統和諧共融。」《米其林指南》國際總監 Gwendal Poullennec 說。 「米其林指南評審員也觀察到臺灣餐飲業的蓬勃發展,許多新餐廳的開業令人振奮。精緻餐飲不僅是西方料理,更涵蓋了與臺灣和亞洲風味連結的當代美食。我們的評審員對主廚們透過菜色創作表現出的才華、廚藝以及創意與個性,感到由衷的驚歎。」 © MINIMAL 10 家餐廳新獲得米其林一星肯定 在新獲得米其林一星肯定的 10 家餐廳中,3 家從去年入選名單中晉升,另外 7 家則是首次入選,並直接獲得米其林一星肯定。 臺中的 MINIMAL 是自臺灣米其林指南推出以來,首次有必比登推介店家晉升為米其林一星,同時也是全球首間在米其林指南獲得一星肯定的冰淇淋店。這家店是臺中的「澀(Sur-)」的分支品牌。MINIMAL 透過多層次的堆疊變化,大大提升味覺、視覺與用餐感受。菜單每季環繞一個嶄新主題,把冰淇淋視作料理的主素材,並透過七道冰品一一闡述,每道菜品都像藝術品般細膩柔美。 同樣坐落於臺中的 L’Atelier par Yao 也獲得一星肯定。這家餐廳由一位曾在法國磨練技藝的年輕主廚掌舵,他擅於運用本地和進口食材,並透過亞洲烹調技巧呈現當代法國美食。其中評審特別推薦碳烤干貝,在昆布、豌豆及巴西里醬汁的搭配下,呈現令人難忘的搭配與口感。 延伸閱讀:《臺灣米其林指南 2024》共 126 個店家入選必比登推介 © 元紀 最後一間晉升一星的餐廳是位於臺北的 Sens。僅在晚餐時段提供的單一套餐,按照季節進行菜單更迭,大受歡迎的肉凍派則為固定菜色。主廚深受法國文化薰陶,對醬汁的設計與烹調特別講究,更擅長巧妙運用過新鮮香草,增加整體風味。 在今年首次入選米其林指南,並直接獲得一星肯定的 7 家餐廳中,位於臺中的元紀,主廚林菊偉重新詮釋臺灣的飲食傳承和文化,為家常菜增添了精緻的風味。另一間位於高雄的雋,廚房團隊來自澳門和香港,精心打造三款套餐,運用如燕窩和鮑魚等高級食材,並以嶄新的方式重新詮釋了 1980 年代的經典粵菜。 延伸閱讀:閱讀所有和粵菜相關的文章 © […]
