Rice Grading: 5 Tips to Distinguish the Quality of Rice

  1. Single Variety vs. Mixed Rice: Single variety rice is typically labeled with the characteristics of the rice variety and suitable dishes. Each grain of rice is consistent in taste and texture. Mixed rice, on the other hand, is a blend of different varieties, providing varying textures and flavors. For instance, some grains may be softer while others are firmer, and there may be differences in aroma or glossiness.
  2. CNS Grade: According to Chinese National Standards(CNS), white rice is graded into three levels based on external quality. Grade 1 rice has the least amount of damaged grains, broken grains, impurities, and other defects, indicating the highest external quality. There are also rice grains classified as “off-grade,” which have a higher defect rate.
  3. Harvest Season/Processing Date: In Taiwan, rice is typically harvested twice a year. It’s recommended to choose rice harvested closest to the current date. Some vendors may not indicate the harvest season, potentially selling old rice mixed with different years and harvest seasons, often at a lower price. The processing date refers to the date when the rice is milled. Rice begins to oxidize immediately after harvest, and the longer the processing time, the more oxidation occurs, affecting the taste and quality.
  4. Vacuum Packaging: Priority should be given to rice packaged in vacuum-sealed, deoxygenated bags, which slow down the oxidation process. Check for any damage to the outer packaging and ensure the vacuum packaging is intact without any leaks.
  5. Appearance of Rice Grains: Bulk rice may not have complete labeling, so it’s recommended to directly observe the appearance of the rice grains. High-quality rice grains should be plump, uniform in size, have high translucency, and be intact in shape. Poor appearance, such as discoloration, insect damage, broken grains, uneven size, lack of luster, or strange odors, indicates poor quality or lack of freshness.
